Yummy Cauliflower Fritters

Love potatoes? Hate the carbs? Here is a delicious alternative to potato cakes!

Ingredients:
2 cups of riced cauliflower (sauteed to release some moisture)
1 egg
1/2 cup of Parmesan cheese
1/4 cup of almond flour
salt and pepper to taste
dash of garlic powder (optional)



**Note-2 eggs will also work in this recipe to help hold the fritters together. I'm not big on egg-y tasting dishes so I left it to just one. Either works!*

Mix your ingredients

Once everything is mixed, drop by the spoonful into a skillet coated with olive oil, then flatten each fritter. Our spatula did a perfect job of flattening the fritters once they were in the skillet! Fry until brown, then use our spoonula to flip over and brown the other side. This recipe seriously could not be any easier! And who knew spoonulas were so good for flipping food...


**Note #2**-if you use one egg, it is helpful to squish the batter into a ball shape with your hand before putting it in the skillet. This helped them hold together!

The biscuits!

As promised, here are the biscuits! This recipe works great for just two people, I made smaller biscuits and it made about 9. These are also gluten free, but can easily be adapted to be gluten-filled! There are also other variations posted below for your favorite biscuit!

1 cup white rice flour
1/4 cup tapioca flour
12 tsp baking powder
dash of salt
1/2 cup shredded cheddar cheese
2 TBS cold butter, cut into chunks
dash of garlic granules
1/2 cup cold whole milk

* Mix together the flours, salt, and baking powder. Add in the butter and cheese, then the milk. Do not over mix! (If the dough is dry, add milk just a little at a time!)

Drop the biscuit dough by the spoonful on a non-stick or a greased pan. Bake for 15-17 minutes. Top with melted butter and parmesan if wanted! Our mini spatula works great for spreading the butter.



Variations:
Replace the cold, cut butter with 1/4 cup of melted butter, and replace the milk with buttermilk. Omit the cheese and garlic and you've got yourself some buttermilk biscuits!













Cinnamon rolls: use the buttermilk recipe above, but add desired amount of cinnamon and sugar (or brown sugar!)


Ham and Cheese: Use the cheese biscuit recipe and add some sliced ham in the batter

Pepperoni Biscuits: Use the cheese biscuit recipe, and add pepperoni and some dipping marinara sauce!

We love a cozy breakfast

Who doesn't love a cozy morning at home? It's snowing where we are so we are loving our kitchen comforts more than usual. There's not much I love more than my hot cup of coffee on a snow day at home! Since I wasn't too hungry, I just whipped up some butter with cinnamon and honey (to your taste) with our mini spatula (perfect for mixing AND spreading!) and toasted it on some gluten free bread. YUM!

Nobody wants a fooditiude


Like the title says, nobody wants a fooditude, hangry, or any other grumpiness that results from hunger. Especially if you are a picky eater or have food allergies/sensitivities. This is a great gluten free snack to carry on the go! You've got to try this recipe for our #whipitupWednesday:
1 cup of crispy rice cereal
1/2 cup pecans (or whatever nuts you prefer, or a mixture!)
1/4 cup raisins
sprinkle with cinnamon
stir with our spatula (which is awesome for stirring!)

This goes great with fresh fruit that can be carried on the go-tangerines, a banana, apples, or grapes in a baggy!
