Need some veggies in your life? Or need to new life for veggies...

It's time for #whipitupWednesday!
Truth be told, we struggle with veggies around here. I usually try to find a way to cover up the vegetable taste, which typically involves cheese, but this has become a new favorite in our house. Even with minimal cheese! If you have a hard time with veggies, try these delicious brussel sprouts. They are so easy to throw together, you don't even have to have measurements! All you need is:

  • Fresh brussel sprouts (you know the amount you need), cut in halves or even quarters-the smaller, the crispier!
  • spray olive oil
  • salt, pepper, paprika, and parmesan cheese (to taste)
  • non-stick aluminum foil
Pre-heat the oven to 425
After washing and cutting the brussel sprouts, place them in a bowl, Spray olive oil, then sprinkle the salt, pepper, paprika, and parmesan. Using our spatula, stir until coated, then place the brussels on a baking sheet with the foil. Roast at 425 for about 20-25 minutes. I usually stir them around about halfway through just to make sure all sides are getting roasted, but I've forgotten to do that a time or two and it's no biggie! 
These are best served straight from the oven. With extra parmesan :)
