The Perfect Dip

I love to snack. I try to be healthy when it comes to snacking, but sometimes I want something more than a piece of fruit! Enter: the easiest and yummiest spinach dip ever! This was so easy to whip up with our mini spatula. (There's even a video on Instagram showing how easy this is to use in a dip!) Are you ready? All you'll need is:

2 1/2 cups spinach (fresh or frozen-your choice!)
1 tsp butter
garlic salt-to taste
3/4 cup ricotta cheese
6 oz cream cheese
provolone cheese slices
1 red pepper-cut into slices or chunks-again-your choice
paprika

In a skillet on medium heat, cook the red pepper with butter and garlic salt for 2-3 minutes. Add spinach and cook another 3-4 minutes. When pepper is tender and spinach is a nice shade of cooked green, add ricotta and cream cheese. Remove from heat and stir until combined. 

Place in a broil-safe oven dish and sprinkle paprika over the top, layer the provolone cheese and broil until provolone is melted and slightly brown.  


Serve with fresh veggies, tortilla chips, or pretzels. Or just eat it by itself. I may or may not have dipped my homemade pizza in this deliciousness!
